At the end of the story, what does Annie tell the Kellers not to undo?


I do not believe that this comes all the way at the end of the story.  I think you are referring to the part where Annie is bringing Helen out to the water pump to refill the pitcher of water that Helen had thrown on Annie at the dinner.

At this point, Annie is arguing with the Kellers.  The Kellers want to treat Helen gently because of her disability.  But Annie wants to treat her like any other kid.  She tells the Kellers not to undo what she does -- not to go back to treating Helen delicately because that will undo what Annie has done to teach Helen responsibility and a desire to learn.
